Thailand has been receiving visitors for long enough that parts of it have learned to perform themselves - and yet the performance is convincing enough that it barely matters, and behind it the country runs on a logic entirely its own. Bangkok is one of the great cities: loud, layered, a street food culture of extraordinary complexity operating at all hours from carts that have been in the same spot for thirty years. The north is a different country from the south, Chiang Mai a different proposition from the islands, and the northeast - the Isan plateau - is where the food is best and the tourists fewest, which is not a coincidence.
Our guide is being written from the ground up, with the time this place deserves.
