India defeats summary. It is not a country so much as a civilisational argument conducted across 1.4 billion people, 22 official languages, and a geography that runs from Himalayan glaciers to tropical backwaters to Thar Desert to the Sundarbans. The temples of Tamil Nadu are not like the temples of Rajasthan; the food of Kerala shares almost nothing with the food of Punjab; Varanasi operates on a logic that no other city on earth shares. The only honest approach is to pick a thread - a river, a coast, a cuisine, a pilgrimage - and follow it with attention. The country will provide everything else.

We are still gathering the notes that make a guide worth keeping: spice routes through Kerala, Rajasthan's haveli guesthouses, Himalayan trekking logistics and the dhabas on the Grand Trunk Road where the food has not changed in fifty years and does not need to.
